This wonderful extra-virgin olive oil is the 'first run' of the milled olives. No press is used, the oil runs freely from the paste.
Affiortato Mancianti is a member of the Mastri Oleari. The , olives include Moraiolo, Frantoio and Raggiale. The olives are picked by hand and stone-milled for slightly longer than usual. The naturally-surfacing oil which emerges from the paste after milling and before pressing is packed as Affiorato. This is a very sweet and elegant oil, leaving a deliriously lingering taste in the mouth. Both the aroma and the taste are full of fresh olives, salad leaves and lemons. The oil is very smooth, with a touch of peppery bitterness before the sweet aftertaste.
