According to local legend Aristeo, the god of the earth and its fruits, introduced the olive to the Bitonto region of southern Italy. Fattoria Michelangelo have named their extra-virgin and flavoured oils after him.

Only Coratina and Ogliarola olives are used for this oil. They are grown in groves around Terlizzi which is situated inland from Bari, northwest of Bironto Bari in Apulia. The olives are hand-picked and the oil is extracted by continuous cold centrifugal process. It is unfiltered.

The oil, which has gained the company entrance into the Mastri Oleari, has a pleasantly warm aroma of apples and lemons with some nutty undertones. The flavour is fresh and full of almonds with a touch of celery and herbs. There is just a little pepper on the finish. It is a versatile oil which can be used in most culinary applications.
